十四代播州山田錦是十四代中一款以山田錦作為酒米的進階產品，精米步合度35%。中取是清酒的釀造名詞。

在發酵結束後，酒廠會對酒醪進行壓榨，並將得到的酒液分為前、中、後 3 段，分別名為荒走、中取、責切。其中以中取的酒液色澤最清澈、香氣最溫和，品質極佳。
