海膽(ウニ)，日本人口中的 Uni，是日本海產類中最富海洋鮮味的極品，甘甜與鮮味，一試難忘。

海膽排列整齊叫直排，相反就叫亂排。海膽大致上可分為馬糞海膽、赤海膽、紫海膽三大類。

馬糞海膽：

這種北海道海膽主要生產於當地的南部，3-8月都是生產期，本身的肉呈淡淡橙黃色，外觀因像馬糞而得名。雖然肉較小，但味道濃厚甘甜，深受客人愛戴。因其質素和價錢都較穩定，不少日式店舖都會選用，也是比較多客人會進行海膽訂購的品種。

赤海膽：

主要生產在北海道南部的水域，9-10月為做當造日子，味道濃郁甘香，非常鮮甜，但由於近年因日本地區產量下降，所以海膽速遞的價錢也較貴。

紫海膽：

又稱「白海膽」，其實就是因受精而顏色變淺，11-3月期間最當造，肉質嫩滑水分重，最大特色就是生殖腺粒大而長，味道清雅，口感極佳，吃起來顆粒感鮮明，帶有淡淡海水味。

如果不是即時食用，如何處理海膽？


  • 保鮮膜密封後放置雪櫃
  • 切勿放置冰箱，因為放置冰箱後海膽結凍，產生結晶水，會破壞海膽結構，風味與口感全毀。

*無論冷藏冷凍，海膽都會隨著時間推移，喪失甜味，所以越早食用越好。
