大和芋食法百搭，可用作煮粥、煲湯、沙律、涼拌、火鍋、小炒及烹煮和風料理等。相比一般長芋，大和芋黏性較高、口感亦較細膩，最適合磨成泥蓉拌飯食吃，營養亦最得以保留。

大和芋(山藥)(やまといも)味道最濃厚、黏性最強、品質優秀的頂級山藥


選擇大和芋時，儘量選擇外表比較光滑的；切口肉質應呈白色，如已經變色或變乾，代表品質已變差，避免選購。新鮮大和芋，切開後容易氧化變色，建議用廚房紙或毛巾將切口包好，再放入保鮮袋內儲存於雪櫃中增加保存期。如果是完好沒有切口的大和芋，只要冷藏，保存期限可以長達1個月！
