The hairy crab (毛蟹) has grown for many years in the extremely cold deep seas of Hokkaido. Its crab meat is tender, with abundant crab tomalley that is rich and sweet.
The main production area of hairy crab (毛ガニ) is Hokkaido. The crab lives at depths of 30 to 200 meters, preferring sandy and muddy seabeds with water temperatures below 15°C in clean, unpolluted environments. Hairy crabs cannot yet be farmed artificially and are a wild seafood product from Hokkaido. Although small in size, a 600-gram crab may take at least 10 years to mature, making it very precious.
The crab body is brown and covered densely with fine hairs. When cooked, it turns bright orange-red, a distinctive famous crab unique to Hokkaido. Despite its small size, the hairy crab’s flavor is fresh and sweet, with crab tomalley that is richly layered and aromatic.
