These oysters from Yonesaki in Iwate are known for their large, thick meat and refreshing, crisp texture, making them among the most refreshing oysters in Japan. The oyster skirt is crisp, with a rich seawater flavor that floods the palate. When the oyster meat breaks, it fills the mouth with strong oyster taste, perfect for those who enjoy bold flavors. Their rich taste and texture also make them delicious when cooked.
Yonesaki is located in Hirota Bay, a nutrient-rich area where oysters are raised for over two years. Production is controlled to ensure quality, and hot water is used to remove impurities, ensuring each oyster receives sufficient nutrients to develop a rich, creamy flavor.

Handling Instructions: Soak oysters in salted ice water for 20 minutes before shucking to clean surface microbes. Insert oyster knife at the pointed end, push in halfway, gently pry upwards, then scrape side to open shell.
Storage Instructions: Do not wash before storing. Place oysters in a container with a little water, cover with a damp cloth, and keep in the fridge vegetable compartment to maintain moisture. Store for 2-3 days max.
Note: Consume oysters ideally on the day of receipt. No shucking service is provided to avoid contamination.
