Kagoshima A5 Wagyu Striploin Slices have elastic meat with a chewy texture, delivering a rich beef aroma in every bite. The meat is tender and juicy, suitable for pan-frying, grilling, or Korean BBQ.
Also known as shoulder chuck short rib, this triangular cut comes from the area around ribs 1 to 6. The marbling is well-balanced with clear net-like fat patterns across light pink beef. The texture is tender and soft, delivering a rich and flavorful mouthfeel.
Japan has the strictest beef grading system in the world, starting from birth with registration of pedigree, hoof prints, and naming. After removing the internal organs and skin, the proportion of edible meat from each carcass is graded as A, B, or C, with A being over 72%. The quality grade is evaluated based on marbling, meat color, fat color, and firmness/texture, scoring from 1 to 5. To achieve the highest 5 rating, all four factors must be rated 5. Combining yield grade and quality grade results in 15 grades from A5 to C1.
Kagoshima Prefecture, at the southern tip of Kyushu, is Japan’s largest Wagyu producing region. Its Wagyu beef is known for intensely rich flavor, bright red meat, evenly distributed fat, and firmer bite compared to other Wagyu.
