Fresh Bluefin Tuna Otoro (おおとろ) is available with or without akami (lean red meat).
Toro is the ultimate delicacy among sashimi, taken from the fattiest belly portion of the bluefin tuna. Premium Otoro comes from tunas with a belly cut weighing over 50 kg, with approximately 80% fat content—making it the fattiest part of the entire tuna. Toro is covered with delicate marbling, melts in the mouth instantly, bursts with rich, aromatic oil and sweetness, and is never greasy. The ultra-fatty toro is especially popular and is first-class for sashimi.
Akami (あかみ): Lean red meat from the tuna's back, containing no fat. The flesh is red due to high levels of myoglobin in the tuna muscle. It is low in fat, firm in texture with a satisfying bite, and priced more affordably.
Otoro (おおとろ): Lighter in color than chutoro, appearing more white, located in the front section of the abdomen. This part is extremely fatty, with fat distribution resembling snowflakes. It offers the natural savory richness of tuna fat and is so fatty that it melts in the mouth.
Portion Size: ~3–4 kg per portion (without akami)/~3.5–4.5 kg per portion (with akami)
