Description
Hampirachi (Kanpachi fillet): when viewed from the front, two dark-green bands run from above both eyes up to the back, resembling the Chinese character 八. Its flesh is firm with a slight, unique crispness. Fat content is lower than similar buri (amberjack), so it is rich yet not greasy, with a refined umami.

Direct from Japan, this fillet is ready for sashimi. Scales, head, tail, and innards are removed. After opening, simply peel off the skin and remove fin bones, then slice and serve—quick and easy.

Preparation:
Already boned; slice and serve immediately.

Storage:
Refrigerate immediately upon receipt. Keep chilled seafood at 0–4°C and consume within 2–3 days. After opening, finish within 2 hours at room temperature. Do not refreeze after it has been kept at room temperature.
