These oysters come from Takahashi Suisan in Hokkaido, known for their plump and full-bodied meat. They have a very creamy texture with no strong fishy or metallic smell. The oysters are prized for their smooth, rich flavor and freshness, making them highly popular for raw consumption.

Handling Instructions: Soak oysters in salted ice water for 20 minutes before shucking to clean surface microbes. Insert oyster knife at the pointed end, push in halfway, gently pry upwards, then scrape side to open shell.
Storage Instructions: Do not wash before storing. Place oysters in a container with a little water, cover with a damp cloth, and keep in the fridge vegetable compartment to maintain moisture. Store for 2-3 days max.
Note: Consume oysters ideally on the day of receipt. No shucking service is provided to avoid contamination.
