喜知次(又稱赤魚)佢有閃亮嘅外皮紅色,被稱為「深海紅寶石」,經過一夜乾處理後,色澤更加鮮艷,增加了視覺的吸引力。喜知次本身味道非常鮮美,經過醃制和風乾後,其鮮味得到了濃縮,口感更加豐富。喜知次的肉質非常細膩,富含膠原蛋白,經過一夜乾的加工後,肉質更加緊實而富有彈性,滋味濃郁。喜知次一夜乾在適當的條件下可以保存較長時間,這使得它成為了可以長期儲存的海鮮食品。

喜知次一夜乾可以通過多種方式進行烹飪,如鹽烤、燉煮或者做成一夜乾。特別是一夜乾的做法,將油脂豐富的喜知次剖開、清除內臟,再浸泡於與海水濃度相近的鹽水中,最後經過一夜風乾,使魚肉脂肪變得更鮮美,不油膩,肉質更扎實,增添一股迷人的咸香味。

保存方法
