Saltwater Sea Urchin (塩水ウニ)
Uses saltwater that closely mimics the salinity of seawater, contains no alum, and maintains the sea urchin's fresh texture and rich aroma.
Most packaged sea urchin uses alum to preserve freshness and make the texture firmer. In contrast, saltwater sea urchin is preserved only with seawater—completely natural and additive-free. It prioritizes the sea urchin's original sweet flavor. Since alum is not added to set the shape, saltwater sea urchin has no bitter taste and brings out the natural sweetness, allowing you to enjoy the most authentic sea urchin flavor.
Since sea urchin dies easily after being removed from water, saltwater sea urchin is typically preserved in saltwater that mimics seawater. After cleaning, workers soak the sea urchin in seawater before packaging, extending its shelf life to three days. Given this extremely short shelf life and the increased handling difficulty, saltwater sea urchin is generally served only at high-end Japanese restaurants.

How to Handle Sea Urchin if Not Consumed Immediately:
Seal tightly with plastic wrap and store in the refrigerator.
Do not place in the freezer, as freezing causes ice crystals that destroy the sea urchin's structure, ruining both flavor and texture.
Regardless of refrigeration or freezing, sea urchin will lose its sweetness over time. Therefore, consume it as soon as possible.
You can soak it in edible water beforehand to prevent the saltwater from affecting the sea urchin's fresh flavor.
