牛肉眼扒位於肋脊部位，脂肪比例較高 (22%) ，油花豐富，肉味比西冷淡但口感軟腍。牛肉眼扒油脂較豐富。肉質較適宜五成熟(Medium) 到七成熟(Medium Well) 之間令肉眼扒肉質更加多汁、香嫩。

牛肉眼扒取自牛隻的肋脊部位，豐富的大理石油花，烹飪過程中融化，使肉質更加多汁、香嫩。而且肉眼的風味濃郁，帶有明顯的牛肉香氣。安格斯西冷榮獲美國農業部CAB認證，保證其肉質細嫩，牛味濃郁。
