芽葱(芽ねぎ)比一般的葱細小，清爽微辛，只有一種淡淡的葱甜味，質地比大蔥更軟更脆，主要拿來搭配刺身，與清淡的白身魚或青魚類，像鯛、河豚、鯵、鱈等都很搭配。
