一夜乾(日文:いちやぼし;日文漢字:一夜干)係源自日本北海道嘅魚乾,喺保存鮮魚嘅處理方法。同「咸魚」唔同,一夜干做法喺將含有豐富油脂嘅海魚劏開清洗乾淨,用鹽水浸約1個鐘,之後經過一夜風乾,「一夜乾」亦喺咁樣命名。風乾後嘅魚肉更實正,更有油香同魚味,喺獨特嘅居酒屋餸菜。

鮮魚整嘅「一夜乾」係非常好味嘅美食。「一夜乾」通常用海魚製成,魚油豐富,含豐富嘅omega-3、鈣、蛋白質、不飽和脂肪酸等,對人類嘅腦部有益。「一夜乾」用炭火燒一燒或者煎香,喺正餐、宵夜或者送酒嘅美食。

保存方法
