The "Messy" sea urchin, or "乱排海胆," includes three main types: Bafun Uni, Aka Uni, and Murasaki Uni.

• Bafun Uni: Mainly produced in southern from March to August, its meat is pale orange, named for its resemblance to horse dung. Although smaller, it is rich and sweet, favored by many Japanese restaurants and popular in uni orders. Its stable quality and price make it a common choice.

• Aka Uni (Red Sea Urchin): Harvested mainly in southern during its prime season of September to October, it has a rich, sweet aroma. Due to recent supply declines in Japan, prices for Aka Uni have increased.

• Murasaki Uni (Purple Uni), also known as "White Uni" due to color lightening from fertilization, is best from November to March. It has tender, moist meat with large gonad granules, a delicate flavor, and a subtle sea freshness.

If not consumed immediately, how to handle sea urchin?

• Seal tightly with cling film and store in the refrigerator at a temperature between 0-4°C.
  
• Do NOT store in the freezer because freezing causes crystallization of water inside the sea urchin, which damages its structure, flavor, and texture.
