葉血引（ハチビキ），屬於深海高級魚種，又名紅鰤，外型細長、體表鮮紅、肉色偏深紅，脂香濃郁，是日本料理中少見但極具潛力的人氣魚種。

其魚肉結實、油脂分布平均，無論作為刺身、炙燒或香煎料理，皆能帶出濃厚鮮甜。其味道介乎吞拿魚與紅鯛之間，深得內行食家喜愛。
