青芝漬(青かっぱ)作為伴碟小菜一流，應用非常廣泛的日式小菜 。

青瓜有利水、清熱、解毒、止渴、利水腫，利尿、潤腸通便、消炎、減肥之功效。青瓜富含水分，能帶來解渴的效果，同時補充身體所流失的水分，有助維持人體正常體溫；富含維生素 C，具有阻止黑色素沉澱而達致美白的效果；青瓜含丙醇二酸，可抑制糖類轉化為脂肪，被視為減肥食品。
