Description
Kinki is a deep-sea fish from Japan with tender flesh that becomes even smoother as it's cooked. It is rich in fat and stays firm without falling apart. The moist, delicately textured flesh is full of flavor and best suited for simmering (nitsuke) or grilling.

Kinki (キンキ) is known as the "Ruby of the Sea" and is one of Japan's most prized fish. In Japan, it is considered on par with pufferfish and anglerfish as one of the three legendary fish. Highly valued and rare, it truly deserves the title of "king of fish."

This premium northern Japanese fish is abundant off Hokkaido and Aomori, living at depths of 150–600 meters. It is difficult to catch and dies quickly once out of water, making it highly treasured. Its body is vivid red with a black band on the dorsal fin and large, round eyes.

From autumn to early spring is peak season. They store extra fat to make the flesh especially rich and tender. The meat is delicate and rich in collagen, delivering exceptional umami.

Suggested uses:
  • Simmered (nitsuke)
  • Grilled with salt (shioyaki)
Origin: Japan

Storage:
Refrigerate immediately upon receipt. Keep chilled seafood at 0–4°C and consume within 2–3 days. After opening, finish within 2 hours at room temperature. Do not refreeze after it has been kept at room temperature.
