秋刀魚魚脂愈豐富，肉質肥美富彈性，仲帶有甘香濃郁嘅魚鮮。除鹽燒秋刀魚外，秋刀魚刺身絕對值得一試。


秋刀魚，有如彎刀般散發着閃亮銀光，弧度、體態優美，是一種很難人工養殖嘅魚類。喺日本，秋刀魚一般生活於北海道以北嘅海域，全年皆可捕獲，不過佢地每年8月下旬開始洄游至較暖嘅地方繁殖產卵，先喺北海道海域出現。

秋刀魚秋天最肥美，當造期的新鮮秋刀魚的內臟甘香不苦澀，除鹽燒外更可製成刺身。

秋刀魚的味道為三分香，三分鮮，三分甜，剩下一分要自己好好體會。秋刀魚那股獨特甘甜的魚油芳香，那口豐腴肥美的鮮嫩魚鮮，被日本人視為「秋の味覺」的代表之一。


建議食法：

1. 刺身

秋刀魚刺身最能展現魚肉的甘甜滋味。其魚刺及魚骨偏幼，做刺身前，先要去皮去內臟，再慢慢起骨。


2. 鹽燒


如何處理原條鮮魚？

原條鮮魚如打算隔天刺身食用，收貨後應先去除魚頭、魚鱗、內臟，將魚的內外清洗乾淨後印乾水分，包上吸水紙/廚房紙 再包上保鮮紙，便可以存放於雪櫃約1天。
