Description
Wild Shimaaji (天然) is a type of deep-sea jack. ~1.3–1.8kg per fish. The fat is firm and the flesh is plump and tender. Sashimi texture is fine, soft, smooth, sweet, and excellent.

It is the most premium and richest jack. As the saying goes: "Eat Kanpachi (buri) in winter, eat Japan jack in summer."

The back is dark green and the belly bright silver. Its most distinctive feature is a golden-yellow lateral stripe from the gill cover to the tail, which fades as the fish grows. Like other jacks, it has a row of hard scales along the tail.

Known as the "king of jacks" in Japan, it is a highly noble fish with an unforgettable flavor. Compared with ordinary white fish, its umami is richer, leaving a delicate aftertaste. Its fat does not melt like tuna belly, but strikes a subtle balance: smooth, not greasy, crisp yet elastic, and increasingly aromatic with each bite. For sashimi, thick slices are recommended to fully enjoy the rich aroma, sweetness, and layered texture.

Although it is the top choice for premium Japanese cuisine, wild natural Shimaaji is rare. Fish over 1kg are especially scarce. Most Shimaaji on the market today is farmed. Therefore, wild Shimaaji stock is unstable—please check with customer service before ordering.

Storage:
Refrigerate immediately upon receipt. Keep chilled seafood at 0–4°C and consume within 2–3 days. After opening, finish within 2 hours at room temperature. Do not refreeze after it has been kept at room temperature.
