日本產米量第一的新潟縣日夜溫差大

米的黏性與硬度是取決於稻米中的直鏈澱粉與支鏈澱粉含量，支鏈澱粉比例愈高愈有黏性，口感彈牙，而含高比例直鏈澱粉的米，則偏向有嚼勁與粒粒分明。

孕育稻米時，高溫日照充足地方所種植出的米，直鏈澱粉含量較低，多帶有黏性，由此可知，氣候不佳、冷夏因素都可能影響品質。

保存方式：
米是一種在冷藏保存會比常溫保存還要好的食材。冷藏保存時，請放在冰箱的蔬果室。若是溫度在18℃以上且濕度較高的環境，很容易出現米蟲。因此溫度適中，且不會讓米直接暴露在冷空氣之下的蔬果室是最理想的保存場所。如果冰箱的蔬果室沒有足夠的位置擺放米，可以將米放在不會直接吹到冷風的冰箱門邊收納空間裡。若是要常溫保存，最好將米放在溫度及濕度都低的陰暗處，並避免陽光直射。此外，微波爐和冰箱附近的溫度會比較高，廚房和水槽周圍的溼度會較高。因此盡量避免將米擺放在這些地方。
